Creamed Raw Honey

Creamed raw honey — also called whipped or spun honey — is honey we’ve processed to control crystallisation. It has a large number of small crystals, and these stop bigger crystals from forming the way they can in unprocessed honey. That gives it a smooth, spreadable consistency, perfect on toast or crumpets without the drips.

We make our creamed raw honey the same way as the rest of our range: 100% raw, from our own bees, never heated past hive temperature. It’s soft like butter and will melt in your mouth.

What is creamed honey?

According to Wikipedia, creamed honey has other names too. People also call it cremed honey, whipped honey, spun honey, churned honey, honey fondant, or (in the UK) set honey. Some people call it candied honey too, though that term usually means crystallised honey instead.

Because it’s raw and unpasteurised, our creamed raw honey keeps almost indefinitely. Archaeologists have found sealed jars of honey in ancient Egyptian tombs that are still safe to eat today. Almost no bacteria can grow in real honey, which is part of why it lasts so well.

All of our honey starts the same way, from our own hives in Rural Victoria. We don’t feed our bees sugar, and we don’t add anything to the jar. What you taste is what came out of the hive that season.
