Wildflower Honey

Wildflower honey comes from whatever mix of flowers our bees find nearby that season — clover, garden blooms, wild blossom, whatever’s flowering. Because the mix changes with the seasons, wildflower honey can vary from batch to batch. Some jars come out light and delicate. Others come out darker and more robust.

Bees collect nectar from these flowers and carry it back to the hive. There, it’s stored in the honeycomb. It slowly loses moisture until it thickens into honey. When bees forage across a mix of species instead of a single crop, beekeepers call the result wildflower honey — a genuine taste of whatever was in bloom that month.

All of our honey starts the same way. It comes from our own hives in Rural Victoria. We never heat it past hive temperature, so the enzymes and pollen stay exactly as the bees made them. We don’t feed our bees sugar, and we don’t add anything to the jar. What you taste is what came out of the hive that season.
